I don't have a Mac to test with myself, but I do have the latest NDI HX Camera on my iPhone. The first question is to test using NDI Video Monitor/NDI Studio Monitor. Does the signal work there?
I've never been aware of QuickTime Player being able to open an NDI signal.
There is a setting gear on the new NDI HX Camera app. Inside you can change the codec type, I think it defaults to HEVC, you might give H.264 a try to see if that is more compatible with those applications.
